We are so lucky to live in a temperate part of the world where many fruit and vegetables grow all year around. However, there are fruits and vegetables with a specific growing season, and they will be cheaper (and more sustainable) if you buy them in season.

A winter-warming recipe
For a delicious (and sustainable) winter-warming recipe which makes use of seasonal vegetables, you can’t go pass a minestrone! Check out these winter recipes which are light on the hip pocket and made using seasonal vegetables.
9 vegetable minestrone

Ingredients:
3 bacon rashers
2 onions
2 garlic cloves
2 sticks of celery
2 carrots
2 potatoes
2 parsnips
1 cup pumpkin
1 tin of crushed tomatoes
1 cup of broccoli
1 tin of cannellini beans
4 cups of stock
2 cups of water
2 tbl oil
Method:
Dice the vegetables and bacon to approximately the same size.
Heat two tablespoons of oil in a stockpot.
Add the onion, celery, bacon and garlic, and stir for two minutes.
Add the carrot, potato, pumpkin and parsnip, continuing to stir for a few minutes.
Add stock and simmer for ten minutes.
Add broccoli, tomato, tinned beans, water and simmer until all vegetables are tender.
Add more water if necessary.
